Ring in the holidays with this Pistachio Coquito 🥥🍹 6 tbsp shelled pistachios 1 can evaporated milk 1 can cream of coconut 1 can coconut milk 2 scoops pistachio ice cream 1.5 cups rum 1 tsp cinnamon ¼ tsp nutmeg ½ tsp vanilla 2 drops green food coloring (optional) Pinch of salt -Place the pistachios in a blender. Blend on low for 2 minutes and then turn up the speed. Stop every once in a while to scrape down the sides with a spatula. -Once the pistachios resemble a paste, add the remaining ingredients. Blend on low for 1 min and then on high for another min. -Pour in a glass bottle and top it off with a cinnamon stick.
